Stuart is another talent that has been recruited to the Academy. Not only is he a fully-qualified chef with experience in some of Melbourne and Canberra's finest kitchens, he is also the master behind Enigma Fine Chocolates

He specialises in handmade artisan style chocolate truffles, bars and unique items using different cocoa percentages that are made from cocoa beans from different regions all around the world, both mixed and single origin. One of his most famous creations is a hot chocolate made with 70% dark chocolate and is based on traditional Aztec techniques.
